There are so many versions, I use and recommend Crock Pots version. I have not used others, but have found I love mine, since my trusty crockpot has lasted all these years! It has good bones! 🙂 To be sure you have a great pot, read reviews.
A good pot roast is perfect for meal prep. In my version, I will be adding a green avocado sauce which was a perfect addition to my Keto Pot Roast. Even though, the roast is fantastic by itself, the avocado green sauce adds a nice light and freshness to the richness of the meat. It really is a great accompaniment to the dish. Instead of carb loaded carbage mash potatoes, you can whip up some roasted broccoli, cauliflower, or no veggies! Whatever floats your boat!
By the end you will have a melt in your mouth healthy fatty Keto Pot Roast that you can snack on for a few days! 🙂
- 3 lbs Pot Roast
- 1 tsp salt and pepper 1 tscp each
- 1/3 cup EVOO extra virgin olive oil
- 2 cups Organic beef broth Again look at the ingredients
- 2 cloves Garlic With Keto you will want to add this instead of those, Onion Packets that are loaded with non Keto ingredients
- 4 oz Cream Cheese Full Fat
- 4 tbsp Kerry gold butter
- 2 tbsp Onion Powder Be careful when buying powders, they often have non Keto ingredients
- 1 tbsp Rosemary
- 1 tbsp Thyme
- 2 Large Avocados
- 1/2 cup Olive oil 1/2 or more depending on your sauce and thickness you want
- 1 bunch Parsley Large bunch
- 1 bunch Cilantro Large Bunch
- 2 stalks Green Onion Diced
- 1 tsp salt and pepper
- 2 cloves garlic
Set your instant pot to "Sauté" and it will need to be set on high. Add your oil. Later, you will find the great avocado recipe below you can add to your meal!
Once oil is warm you will season heavily with salt and pepper. Brown all sides. This will take about 10 minutes.
Once browned on all sides turn off your cooker. Allow to cool for 10mins. Add beef broth and your new Keto onion cream mixture that's not processed, no hidden ingredients. 🙂
Now, press button for "Meat", you will increased you time to 3 hours. On mine, it did not give my the option to go to 3 hours, but it did 2 and a half or 2 hours. Set it on "high". Put the lid on. Make sure to set your "steam release" to closed. Make sure your lid is tight. The best thing about the new pressure cookers is that they have some awesome safety features built in now! So, as long as you read the directions and pay attention, you shouldn't harm yourself. SAFETY first! 🙂
Before you go on, SAFETY first! Yes, I am an Emergency Room Nurse, so I will reiterate that often, okay?!! I don't want to see you waist your Keto Pot Roast because you had to rush to the ER for burns you received! 😉
Ok, all you have to do it wait. In the meantime, you can roast some broccoli in the oven! And, also prepare that avocado spread! The Keto Pot Roast will smell so good. Once the time is up. Use a kitchen utensil and you can do a quick release by releasing the steam valve, or allow it to cool and do a natural release by itself. Once the steam has been released, you will be able to remove the lid. If it does not let you, it is not ready, DO NOT REMOVE! Make sure your valve it set to release and wait until you no longer see steam , then try it again.
Allow to cool. You will have a wonderful, tender, juicy, and delicious Keto Pot Roast Meal!! 🙂

Pulse together until combined in food processor.
While pulsing add in olive oil until combined and you have a smooth sauce, about 5 minutes.

Place broccoli in large bowl, mix in 2 tbsp. olive oil, steak seasoning, salt and pepper, 2 cloves of garlic.
Place on parchment paper on a large sheet pan. Spread broccoli out. Bake at 450 for 25mins, or until browned.
